Cheddar Biscuits

2 cups Moss' Biscuit Mix
3/4 cup Sharp Cheddar Cheese
1/2 teaspoon dried minced onion
6 oz buttermilk/or milk
1/8 teaspoon garlic powder


Preheat oven to 450. In a bowl, combine all dry ingredients. Stir in buttermilk or milk until all ingredients are wet. Do not over mix. Drop by rounded tablespoons 2 inches apart onto a greased baking sheet. Bake 8-10 minutes or until golden brown. Serve warm. Yield about 15 biscuits.
Mini Sour Cream Blueberry Muffins

2 cups Moss' Biscuit Mix                      2 eggs
3/4 cup sugar                                       8 oz sour cream
1 1/4 cup fresh or frozen blueberries


Preheat oven to 375 F degrees. Combine Moss' Biscuit Mix and 3/4 cup sugar in bowl. In another bowl combine eggs and sour cream. Stir eggs and sour cream mixture into the dry ingredients just until combined. Fold in blueberries. Grease muffin pan. Fill muffin cups 3/4 full. Bake for 9 to 12 minutes or until a toothpick comes out clean. Cool 5 minutes on wire rack.
Yields 42 mini or 12 large muffins.
Blueberry Lemon Coffee Cake

1 large egg slightly beaten                   2 1/4 cups Moss' Biscuit Mix
1/3 cup sugar                                    1 1/4 cup fresh or frozen blueberries
1 teaspoon grated lemon peel             3/4 cup confectioners sugar 
2/3 cup milk                                     4 teaspoons lemon juice


Preheat oven to 350 F. In a bowl combine the egg, sugar, lemon peel and milk: mix well. Stir in Moss' Biscuit Mix just until moist. Fold in blueberries. Pour into greased 9 inch round baking pan. Bake for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack. Cool 5 more minutes. Combine the confectioners sugar and lemon juice until smooth. Transfer cake to plate you wish to serve from. Drizzle confectioners sugar and lemon mixture over cake. Cut into wedges.
Sloppy Joe Biscuit Bake

1 pound ground beef                             4 oz shredded mozzarella cheese         1 small onion, chopped                          4 oz shredded cheddar cheese  1envelope sloppy joe seasoning              2 cups Moss' Biscuit Mix
2 cups spaghetti sauce                           5 oz buttermilk or milk
1- 8 oz can tomato sauce


In large skillet cook beef and onion over meduim heat until meat is no longer pink; drain. Add sloppy joe seasoning, spaghetti sauce and tomato sauce; heat thoroughly.  While mixture is heating mix 2 cups of Moss' Biscuit with 5 oz of buttermilk or milk. Mix according to Moss' Biscuit Mix directions. Pat mixture to a 13 x 9 size, then coat biscuit mixture with dry biscuit mix. Transfer meat mixture to a greased 13 x 9 baking dish. Sprinkle with cheeses. Roll biscuit mixture up. Then unroll biscuit mixture on top of baking dish. Do not leave any over hang of biscuit mixture. Bake uncovered at 375 F for 15 to 25 minutes or until top is golden brown.
